I like to recess em' John but I build the box to fit the plate, the edges can be kinda sharp and catch on stuff at times, plus gets the plate down so the neck doesn't have to sit so high to clear the humbucker. If a guy is putting the plate on a cigar box or craft box it can't be done (routed out) though, Paul sits them right on the box and they look great.
Hey John, I run a router with a 3/8" rabbit bit around the inside of the box about an 1/8" to 3/16" deep and then take the plate to the grinder for a nice tight fit. The key to it is to make the box 3/4" bigger than the plate then you can dress the edges of the plate to fit.

Pat, I am working on an old plate build and was having trouble with the plate not sitting flat. You may be showing me the way here.
