Either way will work. On the build I drew this headstock design for I'm going to glue on wings and apply a veneer to cover that fact. I'm going to try a wider piece of stock for the build after this one.
In the pic below, I decided how long I wanted the face of the headstock to be and drew a line on the edge of the board. Then I drew another line 3 1/2" beyond that first line. Then I drew a diagonal line connecting the top of my first line with the bottom of my second line. I cut the headstock free of the neck by cutting along that diagonal line on my band saw. I clean up the mating surfaces on my jointer and glue up the neck. That's not the only way to do it - it's just how I do it.
