Turns out what it was is the rod Piezo is inserted under a carved out bolt at the saddle and the piezo in the bolt never made contact. So I took a toothpick and jammed it under the Piezo and it made contact with the bolt and Wala! Now it sounds decent!
I used the same box on #3 build with similar results. I discovered several things I did wrong so it was worth the time and effort. The sound and playability on #4 was awesome so thank you number three!
I wonder on the sounds like crap... Have you got 4 cents? Try putting 2 pennies under the saddle to raise the string height a bit. And/or try two pairs of stacked pennies. And/or, it could be lack of down pressure above the nut.
