I've looked at all the wiring diagrams I have and the one that I don not see is:
wiring two piezos to a jack and volume without a 3 way switch.. could anybody point me in the right direction ?

Look at the way the piezos are wired in parallel to the jack. wire it the same, except as peter said, wire them to the volume pot.

Kirby, you mean the two piezos should both be on the whole time? You could wire them in parallel like you would solder just one (red wires both to volume pot and black wires to ground).
You should be able to find some help in the electronics group.
