Here's a diagram that shows how to wire 2 pickups in parallel with independent volume potentiometers, with output controlled by a 3-way switch. Design and circuit elements derived from Ted Crocker diagram and from text available at CBGitty. I'm going to install this on my electric cigar box banjo.

paul most LP's and SG's do this, so obviously not the end of the world. it can be fixed by wiring the centre wiper of the pots to the pickup hot leads, and the switch to the ends though. this way, even with one pot turned right down, the line to the switch is not directly earthed (only through the total resistance of the pot itself).
and just so you know, the new schematic has the pots wired to turn anti-clockwise for louder, too. don't sweat it.

I can't see a way, with a simple circuit, to avoid having no sound from either circuit when the switch is in the center position; my intent was just to be able to blend inputs with one or the other dominant, not necessarily to totally cut out one or the other.

you know that with the two pots wired like in the diagram (i.e. mirrored) one will work backwards? one will be clockwise for louder, one will be anti-cockwise for louder.
also, with this arrangement, if you turn one pot right down and have the switch in the centre position (both pickups on), you'll have no sound from either pickups.
doesn't mean you can't do it this way, just so you're aware that's all.
