I have a fairly thin Ashton box, about 1.25" inside. What would it do to the sound if I add another 1.25" to the thickness so it is a full 2.5" thick inside. This would increase the inside volume from 100 sq in to 200sq. in., plus making it deeper. With this box it would be easy to do, what do you think?

I agree with Wes on this one. If ya leave it thin,.it might have a weaker sound being acoustic. The fatter the box the more volume it will have and make it louder IMO. Make this one electric!
One of my builds is only 1.18" overall thickness at 8"x7.75": I used a steel sound hole cover with a bolt bridge attached to that cover, and bolt on neck. It has a loud vibration withstanding the small interior.
