What is the correct orientation for a single coil pickup? As in the bass plate has a kind of wedge that sticks out where the wiring goes it - does this wedge point up towards the neck or down towards the tail?

Conventionally oriented with the pointy bit towards the bridge. It shouldn't really matter unless it's got staggered polepieces and you are intending to align them with all 6 strings in a regular guitar.
