Acid Pro is what I use only because i know my way around it, but try audacity...but its very good but not as logical... and it works with Line 6 Ux2 which is awesome, apart from the lag!!
a mackie pro usb mixer and audacity has no lag..but you need to get ya amps out :>0

P.s a good mic helps too.. a quiet one rode nt are some of the quitest for noise, but a ribbon mic is good for room sounds, and try pointing it towards awkward corners and playing towards them.
Mic angle makes a difference... its from Keith Richards book..
The bathroom is good too for acoustics...
Free wav apps work well for recording on iphones if you add some reverb afterwards and double track them pan right and left.
for some 3d reverb drag one of the track backwards by the tiniest of amount...bugs patented 3d sound effects. it passes through your head from right to left..

My dad was a BBC outside broadcast soundman once, maybe it in me somewhere?
(Beatles Manchester in 62 I think... all I know is he lost the reel to reel of it Dam!...believe it may have been auctioned in the 80s?... who knows... think it was a reel to reel of the original recording ? but it may have been the sound checks..I would love to know')
