Finished my first electric build today using a splitable humbucker pickup. I used a neck of a cheap knock off Fender Tele. Sounds pretty good (surprise). Already planning my next build. A 3 string with a Piezo pickup. Wondering if I should use 2 so I can sample from the front and back area of the box.

I am still a newbie when it comes to CBGs, but did some wiring with amps and guitars when I was younger (forgot most of it, but it's slowly coming back). If it were me I would use a pickup in combination with the piezo. Then use a 3-way (at least) to in one position have both wired in series, second position have just the piezo, and third position have just the pickup. That's how I would wire it if it were me doing it.
I have a Japanese Squire Strat that works similarly, It has a Dimarzio Tone Zone Single coil twin blade humbucker in the neck position, a Seymour Duncan Hot Rail in the middle, and a Dimarzio Super Distortion Humbucker in the bridge. Each one are wired to a 3-way, center off switch. I either have a single coil, the pickup is off, or I have a humbucker.I can make it sound like a Fender Strat, a Telecaster, or a Les Paul or PRS. If I were smarter I would have went with a 12-way and some push/pull pots, but at the time I did this I was around 16-17 and didn't want to confuse myself, still trying to figure things out.
