I just picked up a piezo without paying attention and realized it has two ceramic contact points. One is in the very middle and a small circle. So I have three concentric rings, the two innermost are ceramic. This makes me wonder, which is the tab I need, and what the heck is the other one for? Thanks

These are used as dual sound output devices, an example would be to play one sound for the front door doorbell and a different one for the back door. I would solder your hot lead to the larger area and ground to the brass. Using both areas won't make any change in how your guitar sounds, but if you choose to use both, wire them parallel (2 hot leads to jack or pot.)
These are self oscillating ones - they are really two piezos in one sharing a common ground. The wire to brass use as negative and use either both of the others as positive or just the one going to the largest amount of ceramic material.
