I have two sets of matching plates I got from the local scrap yard. If I do front and back for the guitar do I cut the back wood out like the front ?

No need to put a plate on the back, any benefit would be voided when placed against your body. The instrument needs a wood or solid back for acoustical projection and box structural integrity.
