I'm making a microphone out of an old telephone earpiece speaker mounted in a tin can - my question is, as the can is conductive, do I need to earth it to the jack socket?

If none of the speaker metal touches the can, it shouldn't be necessary to ground the can, but with sound and electrics, it definitely would not hurt to ground it. One extra step may save a lot of re-do work.
