I think I would find a hardwood dowel the was close and sand it down for a snug tap fit. then figure out a way to drill the hole centered.

Knock the primers out with a nail and I bet It will press easly on to the shafts. As I recall a shotgun primer is about .25 to .245 dia. and thats about what the pot shafts are. After looking at the photo you sent it appears thats what they did.
As a point of intrest shotgun shells are made in low and high brass bases low might work better as a knob.
