I'm building a 2 string CBG bass. I'm not savvy on pickups. Is there a "special" pickup for bass guitars? Or can any humbucker be used?

Yes you can use a humbucker. Normal bass pickups are designed to be punchy. This helps the bass cut through the mix when playing with other people. Humbuckers are not quite as punchy. But will still give you a good sound.
I think you can use a humbucker , I used a flat single coil on my 1961 science mag pdf 2x4 build.
