The way I do it is to use the pickup surround as a template to mark screw holes and the centre for where the humbucker fits and then cut out the hole.
This was for a mini humbucker but I do the same for the full size ones
I then fit the surround and insert the pickup height screws from above and from below add the springs and then screw the humbucker onto the height screws like so
If the string height is high you may have to cut a bit off the springs so you can raise the pickup high enough.
