I was thinking of using individual roller bridges for my 3-string that is setup with peizo and I don’t have room for a rail.  Will the individual roller bridge create enough vibration for the peizo to be effective?

Maybe even more so since the vibration is not being dampened by a larger bridge device.  You're mounting the individual roller directly to the soundboard?  Piezo's seem pretty sensitive.

They should. I seen somebody had posted a pic of a build they did useing
singal bridges.

If your going to use a piezo make sure you hot glue it into bottle cap it will dampen it I also glue the capped piezo under the through neck in bridge position not under the lid .

Just make sure the rollor bridges are secured tightly to the top and all will be fine. Don't be afraid to try new things and have fun with it.
Using a bottle cap is a great idea.
Temporarily place it in a couple places til you find the right spot. Some prefer the neck through piece, some like the box top, some want it near the bridge and some near the neck.
Bridge area will give a louder and brighter tone while the neck area will be a little subdued and warmer toned. So try it in several places til you get what you want.

Yes sorry I just said the through neck position my preferred way ,  Paul is right try a few places see what works for you there’s no rules no harm trying . 

i like to use multiple piezos. neck through is the best way for sustain. if you feel ambitious, you can have a switch for the piezos. one fun thing i've done, if the roller bridge needs more height, use a suitably sized piece of wood and put the piezo(s) between the box and the bridge.

Daniel, how many piezos do you use and where do you place them?

Rusty, depends on the build, but at least two. also the quality of the piezo, some are very sensitive (usually called transducers) and need the hot glue buffering thing Paul mentioned. I forgot who makes it, but there is a "piezo/transducer device" that can be used on multiple instruments. It has a cord and jack attached, and "sticks" on the instrument. Very fine sound. Also I like using a piezo even on mag pickup guitars, but always have a on off switch. Placement is arbitrary, but with a through neck it would be on the underside of the box, closest to the bass side. The other could go near the neck, if more than two have fun. In the photo i used a forsner bit to just countering the piezo flush with the top, and put the bridge directly on them. this also has a mag pickup and another piezo inside. Trial and error, i don't pretend to be an expert.
