Yea, you can definitely turn that 6’er into a 3 stringer? Plenty of members have done so?  Keep the A,D,G strings for GDG tuning? Go to the Resources tab near the top of the page, there’s links to some videos by Shane Speal & Glen Watt on the topics of playing & building 3 string cbg’s. Cheers

Yes you can! It's really easy to turn a six string into a three or four. I go with the 5th, 4th and 3rd string positions when doing it to my guitars. You also have the added bonus of being able to set the intonation right with your bridge. It will have to be redone if you change over to a three string.  

As far as starting to play I'd start with single notes. On each string. Strum that single note with the other two strings. Find where on the neck they sound good for you. Then play with baring chords. this way you'll be on your way to combining both notes and chords. Makes playing a whole lot more fun.
