hello

I am installing a single coil  pickup. It has three wires, pos, neg and ground. I am soldering it to an input which has a positive and negative but what do I do with the ground?

black wire is usually hot, you twist the other 2 together and both are the ground. coils only have 2 wires, the third is a shield wire inside the cable, used for grounding purposes. It's a common cable to use when wiring coils.

Find a way to earth ground your strings, wiring a wire from them to the ground connection,will help eliminate unwanted noise.

wiring is a little different if using a vol or tone pot

The bare wire is the cover ground which will also have a small link to the pickup ground wire(white or red) that should be visable. Both of those wires will go to the ground of the jack/pot while the remaining wire will be the signal wire.

I've read in other. Discussions that they stuck the ground under a metal bridge.
Any advantage to that?

wherever you can to ground strings, tailpiece if metal

grounding the bridge will reduce hum.

What JL said, I should have looked at the link for wire colors, there are a variety of wire colors out there due to different manufacturers, and especially the China made ones don't seem to always follow any typical guide, I've had them all the same color, odd colors, and humbuckers are worse, especially if you mix coil brands, but not to confuse you, Follow what JL and Paul said.
