Can you use an electric guitar that works on a 110-120 volt AC amp in Canada or the USA overseas in Australia or New Zealand on a 220-240 volt AC amp, or is it best to bring a battery powered amp along?

The amps operating voltage is only relative to the power source, not the guitar. Any electric guitar will work with any guitar amplifer, 115/120v or 220v or even a battery powered amp. Only consideration on amp choice is when amplifying an acoustic guitar. Those work best with acoustic amps, due to their integrated anti feedback features. Never play an acoustic electric thru a tube amp. Other than that, go for it.
